Storage
Proper storage is essential for preserving the taste and texture of fine desserts. There are several ways you can do this.
- Store cookies in ziploc bags. Press out as much air as possible.
- Buy bakery boxes and store cookies in them
- Left-over cakes should be cut into smaller wedges, wrapped in plastic wrap, then put into foil and frozen. This way, you can take out one piece at a time. To serve, set it out on the counter until thawed.
- Even mousse cakes with whipped cream toppings can be frozen by using the above method. However, you should first "quick freeze" each wedge before wrapping to help keep the topping in place. You might notice that the whipped cream has cracked a little and possibly dried out just a bit, but the taste will be preserved.
